🍽️ Soft Stuffed Peppers Recipe
Ingredients:
- 4 bell peppers, tops cut and seeds removed
- 1 lb ground turkey or beef
- 1/2 cup instant rice (optional—make sure it’s fully softened)
- 1/2 onion, finely minced
- 1 cup finely chopped spinach (optional, for added softness & fiber)
- 1 to 1 1/4 cups marinara or tomato sauce (plus extra for topping)
- 1/2 cup shredded cheese (mozzarella or mild cheddar)
- Salt, pepper, garlic powder to taste
Instructions:
- Preheat oven to 375°F.
- Sauté onions and ground meat until browned. Drain fat.
- Stir in sauce, veggies, and rice. Let simmer 5–10 minutes to soften everything.
- Spoon mixture into peppers. Top with more sauce and cheese.
- Place peppers in a baking dish with a bit of water at the bottom. Cover with foil.
- Bake for 30–40 minutes, until peppers are very soft and filling is bubbling.
