When my mother was moving through the stages of dysphagia recovery, I wanted to make sure she still enjoyed meals that felt familiar and satisfying. Mexican food was a favorite in our home, so I found ways to modify it while keeping the bold flavors intact. This pureed Mexican platter became a favorite—it’s packed with protein, healthy fats, and comforting flavors, all while being easy to swallow.

How to Make It

Ingredients:

For the Guacamole:

  • 1 ripe avocado
  • 1 tbsp lime juice
  • ¼ tsp garlic powder
  • ¼ tsp onion powder
  • 1 tbsp plain Greek yogurt (for a smoother consistency)
  • Salt to taste

For the Refried Beans:

  • ½ cup canned refried beans
  • ¼ cup warm water or low-sodium broth (to thin the texture)
  • 1 tsp olive oil or butter (for added smoothness)

For the Cheese Sauce:

  • ¼ cup shredded mild cheddar cheese
  • 2 tbsp milk or heavy cream
  • 1 tsp butter

Instructions:

  1. Prepare the Guacamole:
    • Mash the avocado until smooth, or blend for a silkier texture.
    • Stir in lime juice, garlic powder, onion powder, and Greek yogurt.
    • Adjust the consistency by adding a splash of water or more yogurt if needed.
  2. Smooth the Refried Beans:
    • In a small pot, warm the refried beans over low heat.
    • Stir in warm water or broth gradually, mixing until you get a smooth, scoopable consistency.
    • Add olive oil or butter for extra creaminess.
  3. Make the Cheese Sauce:
    • Melt butter in a small saucepan over low heat.
    • Add cheese and milk, stirring constantly until melted and smooth.
    • If too thick, add a little more milk until it reaches a creamy, pourable consistency.
  4. Serve & Enjoy:
    • Spoon the guacamole, refried beans, and cheese sauce onto a plate in separate sections or mix them together for an easy-to-eat blended meal.
    • For extra variety, you can also add a smooth tomato salsa or a dollop of sour cream.

Tips for Dysphagia:

  • Always test the consistency with a spoon before serving—it should be smooth and easy to swallow without chunks.
  • If needed, blend each component for a more uniform texture.
  • This meal can be served warm or at room temperature depending on comfort.

This meal worked beautifully for my mother because it felt like real food—not just another “modified” dish. It reminded her of our taco nights, and that connection made all the difference in her willingness to eat.
